I Did It For The Peanut Butter, Smoothie Bowl

Happy Saturday everyone! It’s a gorgeous day in Delaware and I’ll be venturing out shortly for a brisk walk to get that Vitamin D. It’s feeling like summer here in the high 80’s and I’m channeling those summer vibes with some old school hip-hop. Think Last Night by Keyshia Cole & Diddy. Definitely a staple in my summer jams.

Today, I decided to try my hand at a smoothie bowl and it was surprisingly delicious! Mainly, #IDidItForThePeanutButter because my love runs deep…eating it by the spoonful, with apples, on bread, in baked goodies. You name it, and peanut butter most likely tags along 😉

For this particular smoothie bowl, I went a little nuts (ha!) and added some veggies. Pretty bold move for me since I’m not one to stray away from my go-to peanut butter banana smoothie (you guessed it: peanut butter & banana, with some greek yogurt and a little bit of coconut water), but I’m glad I did. I’d been fairly skeptical of the smoothie bowls in the past, but I’m happy I finally took the plunge because I was pleasantly satisfied 🙂 Check out my recipe below and let me know what you think!

Get Nauti:

Essentials

1/2 banana

2 small sprigs of kale

1/4 cup of refrigerated pre-cooked cauliflower rice

1/4 of a roasted sweet potato, skinned

2 tbsp of coconut water

1/4 cup of yogurt

Blend all the ingredients together until smooth and add your toppings of choice! I’ve listed a few of my favorites below. Enjoy!

Half of a banana, sliced

Generous amount of peanut butter

Welcome to The Nauti Baker 🙂 I’m so happy you’re here! My name is Brittany Godorov and I’m a nautical enthusiast with a passion for baking. By the amount of nautical jewelry, clothing, etc. that I own, you could say I’m “obsessed”, however #noshame. My dream one day is to own a home with all the nautical flair in it that is humanly possible/socially acceptable, while baking up a storm in the kitchen with my double ovens…but I digress…

I grew up in Pennsylvania, went to Muhlenberg College for my undergraduate degree, and started working in the “real” world as an accountant. I’m an accounting consultant now and still love to bake on the side! Growing up, my mom taught my sister and I how to bake. It was always so fun and such a bonding experience for us whenever we baked together. Holidays especially are the best times, since we have so many traditions around family recipes that I cherish even more each year as I get older.

That’s me up there, at a Strawberry Festival in Massachusetts that I went to with my friend last summer. Somehow we were coaxed into participating in the strawberry shortcake eating contest. Let’s just say, Michele and I had a #berrygoodtime.

You may ask, but why the NAUTI baker? Well, after college, I lived in Boston for four years, which is truly where my nautical obsession enthusiasm flourished. Seeing the boats, waterfront and alllll the anchors – what’s not to love?? It quickly became a part of my personality and my friends & family continue to send photos to me of anchors, sailboats, etc. whenever they see them. I LOVE IT (big surprise). And I’d love to share this side of me with you along with my passion for baking!

Now that I’ve covered the introduction, let’s get down to the baking. Here at The Nauti Baker, I will be getting a bit “nauti” in the kitchen and sharing my baked goods with you.
